The Ringneck Pheasant is a popular choice for hunting and fine dining. Pheasants are hardy birds that thrive in varied environments. Ringneck Pheasants can begin to fly as young as 10 days old, although our flight ready birds are at least 12 weeks old and conditioned in flight pens for maximum performance.

Chukar Partridge are part of the pheasant family. They are hardy birds weighing between 1-2 pounds and built in a more rotund fashion than most upland game birds. Chukar partridge hold well in cover, are known for their agility in the air, and are known for their speed and evasiveness, all which lend to prime hunting experiences.
As a cuisine Chukar Partridge are very good eating. They are lean, tender, and mild in flavor. Similar to domestic poultry, the breast is a white meat while legs are darker. Overall Chukar partridge is very versatile and can be prepared roasted, grilled, sauteed, or braised.
Northern Bobwhite Quail are small birds weighing about a quarter of a pound. Despite their size these are bold runners and strong flushers that will instinctively call and regroup after dispersal creating repeated flushing and/or training opportunities.

The Mexican Speckled Quail is a special color variant of the Northern Bobwhite quail. The feather pattern is similar but in a beautiful yellow and gold with black markings. These are considered an ornamental variation of Northern Bobwhites, similar in size but less flighty in temperament. Still considered excellent for hunting and meat.
Snowflake Quail are a special and rare color variation of the Mexican Speckled Bobwhite. Boasting a unique and intricate plumage pattern resembling delicate snowflakes across the chest back and wings these extraordinary quail are prized by collectors, breeders, and hunters.
Gambel quail are a popular gamebird easily recognized by the bobbing topknot of black feathers displayed on both male and female. Although part of the scaled quail family the Gambel male is distinguished by the black belly patch. The Gambel is a ground dweller and notorious runner, darting like lightning before exploding in a flush.
For all their beauty the Gambel is also a prized dish. These quail are typically 6-8 ounces, just a touch smaller than those in the bobwhite family. They are lean and moist with a delicate game flavor, sometimes described as a sweet finish.
A cousin to the Gambel quail, the California Quail is similar in size and skittishness. They too are highly active ground dwellers who prefer to run like lightning and flush with just as much vigor. Both males and females have the comma shaped black topknot of six feathers. The distinguishing color pattern is the grey-blue scaled chest with light brown belly and dark brown cap.
As with their close relative the Gambel Quail, California Quail are considered a delicacy. Lean and moist with a delicate game flavor.
Jumbo coturnix quail are a favorite among hunter and diners. These fast growing plump birds mature as early as 8 weeks. While considered ground dwellers and avid runner they will also flush and fly short distances. A great choice for beginners, dog training, egg production, or dining.
As a cuisine the jumbo coturnix weigh in between 10-14 ounces in comparison to the regular coturnix averaging 6 oz. Quail are claimed to be the best eating bird on the planet and the lean, dark, moist coturnix with a light game flavor is no exception. A very versatile culinary experience that can be prepared over an open fire or in a five star restaurant!
